M Resort Las Vegas now new restaurant open

Meril (or Emeril Lagasse’s Meril / Meril by Chef Emeril Lagasse).

It is a Contemporary American restaurant at M Resort Spa Casino in Henderson, Nevada (near Las Vegas), named after Emeril Lagasse’s daughter. It features dishes with global influences inspired by his travels. The official M Resort site lists it as now open.

M Resort Spa & Casino (also known as The M Resort) is an upscale off-Strip boutique hotel, spa, and casino in Henderson, Nevada, at 12300 Las Vegas Blvd S.

It sits about 8–12 miles south of the Las Vegas Strip (near the southeast corner of Las Vegas Boulevard and St. Rose Parkway, just east of Interstate 15), making it the southernmost casino in the Las Vegas Valley and often the first major resort visible to drivers arriving from California.

History and Ownership
Named after the Marnell family, it was designed and built by Marnell Corrao Associates and opened on March 1, 2009 (during the Great Recession), initially with a 16-story tower of about 390 rooms and a roughly 92,000-square-foot casino.

Penn Entertainment (then Penn National Gaming) acquired the property’s debt in 2010 and took full ownership in 2011; it is now owned by Gaming and Leisure Properties and operated by Penn Entertainment. A second (East) tower with 375 modern rooms opened in late 2025 (around December), bringing the total to 765 rooms. The casino floor was also renovated around the same period.

It serves as the official Team HQ Hotel of the Las Vegas Raiders (with a related partnership for pre-game room blocks and themed dining).

The casino spans over 96,000 square feet of naturally lit, open-feeling gaming space. It includes the latest slots and video poker machines, table games (such as blackjack—including high-limit double- and six-deck options—craps, roulette, and Pai Gow Poker), a state-of-the-art race and sports book, and a VIP lounge. Promotions and the PENN Play loyalty program are available.

Amenities
Pools**: The family-friendly M Pool complex (around 100,000 square feet of venue space) features two large heated infinity-edge pools, whirlpools, daybeds, and cabanas with poolside food/beverage service. DayDream is an adults-only (21+) pool club with an infinity-edge pool, hot tubs, cabanas, daybeds, an ice-railed bar, and weekend DJs.
Spa Mio**: Full-service spa and salon with treatments, hair services, and more.
Fitness center**: Fully equipped gym (free for hotel guests) with cardio, weights, strength equipment, steam, sauna, and hot tub areas, located within Spa Mio.

Dining options include contemporary American at Meril (Emeril Lagasse’s restaurant), prime steaks and seafood at Anthony’s, authentic Italian at Marinelli’s, Asian-inspired cuisine with rooftop views at Jayde@16, Raiders-themed casual fare at Raiders Tavern & Grill, deli items at Vig Deli, and pastries/coffee at Baby Cakes artisan bakery. Bars and lounges include M Bar (with live music), Knight Time Hockey Bar, and AMP’D.

Entertainment features live music, bands, UFC viewing parties, and other events, with options at venues like AMP’D, M Bar, and Marinelli’s on weekends.
