In Las Vegas, there is no dish, no matter how iconic elsewhere, that cannot be given a glow-up, a lavish reworking, a startling price tag.
And so it is that the Vegas urge to excess has come for the cheesesteak, the famed Philadelphia-born sandwich classically assembled from sliced steak, mushrooms and onions grilled on the flat top, then covered in melted cheese (sometimes Cheez Whiz) and stuffed in a hoagie roll.
At The Guest House in Town Square, executive chef Todd Miller is sending out a $100 cheesesteak featuring shaved wagyu, foie gras (Vegas!), a flurry of freshly shaved truffles (ditto!), house cheese sauce (fontina, Gouda, Parmesan, Gruyère), mustard-pickled shallots, and caramelized onions cooked for more than three hours, all on a house truffled hoagie roll.
Miller developed his version of the cheesesteak at Barclay Prime, the luxe Philadelphia steakhouse, when it opened in 2004. Back then, the sandwich was priced at $100, too. Which makes $100 in 2026 almost seem like a deal.
